Cheesy Mac and Cheese Recipe with Thanksgiving Wines

The secret ingredient is always cheese! This cheese lover finds macaroni and cheese to be one of the most comforting foods. So, in the spirit of Thanksgiving, I decided to throw it down in the kitchen and make what is probably the creamiest and cheesiest mac and cheese (you’re welcome). I also did it while juicing…foodie torture!

Now for the vinito, because a meal without wine is like macaroni without cheese. I recommend a light unoaked Chardonnay for a simple creamy mac and cheese. And as a general rule, white meat such as Thanksgiving turkey pairs well with white wines like Chardonnay, Verdejo or a dry Riesling. If you are more into red wine, you can even do medium bodied reds, such as Pinot Noir, Merlot, a fruity Zinfandel (or Primitivo), or a Beaujolais Nouveu.

Creamy Mac and Cheese Recipe


  1.  2 1/2 to 3 cups uncooked macaroni elbows 

  2. 6 tbsp. butter

  3. 6 tbsp. flour (you can substitute with rolled oats)

  4. 3 cups milk 

  5. 1 1/2 tsp. salt

  6. 1 1/2 tsp. sugar

  7. 1 pound Velveeta cheese, cubed

  8. 2/3 cup sour cream 

  9. 1 1/3 cup cottage cheese 

  10. 3 cups shredded cheddar cheese

  11. 1 1/2 cups shredded mozzarella cheese


  1. Ritz crackers, crushed

  2. 1/2 cup butter, melted

  1. Preheat oven to 350 degrees

  2. Cook and drain macaroni elbows in cold water

    Over medium heat in a saucepan:

  3. Melt butter 

  4. Stir in flour (or oats), mix well

  5. Add milk stirring until sauce thickens

  6. Add salt, sugar, and Velveeta cheese, stir until cheese is melted

  7. Add sour cream and cottage cheese, stir well

    Remove saucepan from heat

  8. Put the macaroni, cheddar and mozzarella cheese in a bowl

  9. Pour in the hot creamy cheese sauce, mix macaroni and sauce

  10. Pour everything into a greased oven-safe casserole dish

  11. Sprinkle the crushed Ritz crackers over the top

  12. Drizzle with melted butter

  13. Bake at 350 degrees for 45 to 50 minutes or until crackers are brown
