Wine down at local hidden gem Casabe 305 Bistro for a food and wine pairing experience led by Sommelier for Hidalgo Imports, Martha Rodriguez. Network with like-minded women and wine lovers as you enjoy a gourmet charcuterie prepared by Chef Diego Texera and 4 Spanish wines from Valencia, Sanlúcar de Barrameda, La Rioja, and Ribera del Duero.

ABOUT CASABE 305 AND CHEF DIEGO TEXERA
Venezuelan Chef Diego Vicente Texera is passionate about healthy lifestyle and quality nutrition. Early in his career, Diego studied Naturopathy at the Kushi Institute in Boston (formerly the East West Institute). In 1971, Diego returned to Venezuela where he opened the “Zen-tro Macrobiotico”. Eventually, he’d open 28 health food stores named “Naturalia” across Venezuela and two in Puerto Rico, one of which had a restaurant in it. Several years later, Diego opened the original “Casabe” in a small Old Spanish colonial fishing village called Choroní. Beautifully nestled in a tropical rainforest just steps from the Caribbean Sea, the restaurant had a 6 month waiting list. Unfortunately, due to Venezuela's crisis, Diego had to sell his beautiful creation and find a new home for Casabe. In 2012, he opened the doors of Casabe 305 Bistro in Miami. Embracing the different cultures Miami has to offer, Chef Diego provides a Venezuelan dining experience you just have to taste for yourself.
About The Gourmet Charcuterie
Start with a clean taste of fresh Mozzarella to prepare your taste buds for the Spanish wine tasting. Fresh Bocconcini Caprese Pinchos. Duck Magret with fire roasted Panini. Natural Prosciutto and Asiago cheese with fire roasted Panini. An array of cured meats and aged cheeses.
About The Spanish Wines: Winemaker Notes
Cava Brut 'Bodegas Torre Oria' from Valencia, Spain (welcome drink)
This sparkling wine is pale yellow color with golden highlights. It has a full floral bouquet of wild flowers and berries, and abundant fine bubbles. On the palate it has a magnificent presence, it is complex, full-bodied and fresh with lovely enduring flavors of peaches, tropical fruits and flowers.
La Gitana Manzanilla 'Bodegas Hidalgo La Gitana' from Sanlucar de Barrameda, Spain
Bright with almond notes backed by a long finish. Chamomile and toasty notes. Dry, clean and crisp.
Cune Crianza 'Bodegas CVNE' from Rioja, Spain
Bright cherry colour with some violet nuances. On the nose, red berries aromas remain over the oaky and balsamic notes from its ageing in wood. It shows an elegance in the mouth, yet very lively, with some spice back notes and a very balanced acidity.
Alidis Roble 'Bodegas Viña Mambrilla' from Ribera del Duero, Spain
Well-defined blackberry bouquet with hints of espresso in the background, the oak playing a supporting role. The palate is medium-bodied with fine tannins and good structure. This is well-balanced, fresh with good acidity and a focused finish of red currant and cranberry fruit with hints of mocha and dark chocolate playing in the background.
